This standard specifies the method for the determination of maleic acid and maleic anhydride in food simulants. This standard applies to the determination of maleic acid and maleic anhydride in water, 3% (mass concentration) acetic acid solution, 10% (volume fraction) ethanol solution and olive oil four food simulants. The lower limit of determination of maleic acid in water, 3% (mass concentration) acetic acid solution and 10% (volume fraction) ethanol solution in three water-based food simulants was 3.0 mg/L; maleic acid in olive oil The lower limit of determination is 3.0 mg/kg, and maleic anhydride is calculated as maleic acid.
