This standard specifies the method for the determination of chloropropanol content in food. The first method of this standard is applicable to the determination of 3-chloro-1,2-propanediol (3-MCPD) content in hydrolyzed vegetable protein solution, seasoning, sausage, cheese, fish, flour, starch, grain and bread. The second method is suitable for monochlorinated 3-chloro-1,2-propanediol (3-MCPD) and 2 -chloro-1,3-propanediol (2-MCPD) and dichloro-substituted 1,3-dichloro-2-propanol (1,3-DCP) and 2,3-chloro-1-propanol (2, 3-DCP) content determination. The third method is suitable for the determination of 3-MCPD, 1,3-DCP and 2,3-DCP in soy sauce, vinegar, chicken essence, hydrolyzed vegetable protein liquid and other foods and condiments. The determination limit of the first method of this standard is 5μg/kg, and the linear range is 0.005ng~0.600ng. The detection limit and quantification limit of each component of chloropropanol in the second method are 2.0μg/kg and 5.0μg/kg respectively, and the linear range is 0.020ng~0.500ng. The quantification limits of 3-MCPD, 1,3-DCP and 2,3-DCP in the third method are 10.0μg/kg, 5.0μg/kg and 3.0μg/kg respectively, and the linear range of 3-MCDP is 20μg/kg~ 1375μg/kg, the linear range of 1,3-DCP and 2,3-DCP is 2.5μg/kg~90μg/kg.
