This International Standard specifies a method for determining the wax content of olive oils and olive pomace sterols as a mass fraction in milligrams per kilogram. The respective waxes are divided based on the number of carbon atoms. The procedure is recommended to distinguish between olive oil produced by pressing or centrifugation and olive oil produced from olive pomace (olive pomace esterol).
