This International Standard specifies a method for determining the content, as a percentage by mass, of 2-glyceryl monopalmitate in olive oils and olive pomace sterols that are liquid at ambient temperature (20 °C). NOTE This International Standard is based on COI/T.20/Doc. 23:2006.
