This standard specifies the enzymatic method for determining the acetyl content of granules and cold-water soluble modified starches. The total and free acetyl group content can be measured, and the combined acetyl group content can be calculated. This method is suitable for the determination of samples whose acetyl group content does not exceed 2% by mass.
