This document specifies the design requirements for construction, electrical equipment, power supply and distribution, air switches and wire selection, lighting, emergency power supply, weak current systems and safety protection in the electrical design of commercial all-electric kitchens. This document applies to the electrical design of new, renovated and expanded commercial all-electric kitchens of all sizes. This document does not apply to the electrical design of commercial kitchens using liquefied petroleum gas or mobile kitchens such as trains and ships.
