This document describes a method for the determination of the iodine value in animal and vegetable fats and oils. Appendix B gives the method for calculating the iodine value based on fatty acid composition data. This method is not applicable to fish oil. In addition, cold-pressed, unrefined animal and vegetable oils, and (partially) hydrogenated oils may yield different results by these two methods. The calculated iodine value can be influenced by impurities and thermal degradation products. NOTE: This method uses Cd1c 85 of the American Oleochemical Society (AOCS).
