Scope
This part of ISO 16634 specifies a method for determining the total nitrogen content and calculating the crude protein content of cereals, legumes and ground cereal products. This method, like the Kjeldahl method, does not distinguish between protein nitrogen and non-protein nitrogen. Various conversion factors are used to calculate the protein content (see 3.2).
