- Scope
- This International Standard specifies a method for determining the nitrogen content and calculating the crude protein content of milk and milk products by the Kjeldahl method using conventional and block digestion methods. The procedures apply to: liquid cow's milk (whole, semi-skimmed or skimmed), goat's and sheep's whole milk; Hard, semi-hard and melted cheese; Dry milk and dry milk products (including milk-based infant formula, milk protein concentrate, whey protein concentrate, casein and caseinate). The procedures are not suitable for samples containing ammonium caseinate. NOTE If non-dairy protein sources are present in the products specified in this International Standard, inaccurate results for crude protein will be obtained.
