Scope
This International Standard specifies a method for determining the nitrogen content and calculating the crude protein content of milk and milk products according to the Kjeldahl method, using conventional and block digestion methods. The methods are applicable:  ——to liquid cow's milk (whole, semi-skimmed or skimmed), to whole liquid goat's and sheep's milk;  ——to hard, semi-hard or soft cheeses;  ——to powdered milk and dairy products powder, in particular infant milk, milk protein concentrates, whey protein concentrates, caseins and caseinates.
