Scope: This standard applies to the food additive citrate fatty acid glycerides prepared by esterification of glycerin with citric acid and edible fatty acids or by the reaction of edible fatty acid mono-diglycerides mixture with citric acid. It is composed of citric acid and mixed esters of edible fatty acids and glycerin, and may contain a small amount of free fatty acids, free glycerin, free citric acid and mono- and diglycerides, which may be fully or partially neutralized by sodium hydroxide or potassium hydroxide.
