- This standard specifies the Dumas method for determining the total nitrogen content in cereals and legumes, and specifies the method for calculating the crude protein content. This standard is applicable to the determination of crude protein content in cereals and beans. This method is the same as the Kjeldahl nitrogen determination method and cannot dis inguis between protein nitrogen and non-protein nitrogen.
