This standard specifies the method for the determination of α-amylase activity in grains by the falling number method. This standard applies to cereals, especially to wheat, rye and its flour, durum wheat and its semolina. Particle sizes for whole durum semolina and whole wheat flour are specified in this standard. This standard is not applicable to the determination of low α-amylase activity, and related methods can refer to ISO 7973. By converting the falling number to liquefaction number (LN), the composition of the grain, flour or semolina mixture required to produce the product for which the falling number is required can be extrapolated.
