This part of SS 11 specifies a method for the determination of volatile acids, which is applicable to all fats, but is especially useful for fats and blends containing short and medium carbon chain length fatty acids. The method for the determination of volatile acids is empirical; only a part of the volatile acids in the sample is actually determined. Consequently in order to obtain accurately reproducible results it is essential that the dimensions of the apparatus and details of the procedure are strictly adhered to.
