This standard describes the butyrometric method x) according to Gerber, which is used to quickly determine the fat content of whole milk, fully or partially skimmed milk and whey, provided that these liquids are in good condition. Circumstances may aris in which the butyrometric method described in the standard leads to less correct results, such as with homogenized milk and milk prepared from non-skimmed milk powder (see 8.6).
