The determination of the phosphatase activity is used, among other things, to investigate the degree of heating to which milk and milk products have been subjected (see 10.1, 10.2 and 10.4). The method given in this standard is applied, among other things, to the inspection of milk and liquid milk products designated as "pasteurized" (see 10.1, 10.2 and 10.4) (see 10.3).
