Scope
This International Standard specifies an enzymatic method for the determination of the citric acid content of cheese and processed cheese products. CAUTION - Reliable results will only be obtained if the Good Laboratory Practice (GLP) rules for enzymatic analyses are applied strictly. These GLP rules are given in annex A.
