This standard specifies the method for the determination of total sugar content in edible mushroom products. This standard is applicable to the determination of total sugar in three types of edible fungi: black fungus, white fungus and Huoling. This standard is not applicable to the determination of total sugar content in other mushrooms with high protein content (mushrooms, shiitake mushrooms, oyster mushrooms, etc.).
