- By consulting domestic and foreign literature and standards, combined with the inspection results of wheat samples taken during the survey, the quality indicators, grading indicators, claim indicators, and safety indicators of Shaanxi Haoliangyouguanzhong wheat were clarified. Quality indicators: impurity content ≤ 1.0%, imperfect kernel content ≤ 6.0%, moisture content ≤ 12.5 (g/100g), falling number ≥ 260s, color and odor are normal; graded indicators and claimed index food score value high-gluten wheat first class ≥85 points, second-class ≥80 points, first-class medium-gluten wheat ≥85 points, second-class ≥80 points; hardness index high-gluten wheat ≥65, wet gluten content high-gluten wheat ≥30.0%, medium-gluten wheat ≥26.0%; gluten index High-gluten wheat ≥60.0%, medium-gluten wheat ≥40.0%; test weight of first-class high-gluten wheat ≥790 (g/L), second-class ≥770 (g/L), first-class medium-gluten wheat ≥790 (g/L), second-class etc. ≥770 (g/L); safety index PN ≤ 0.7.
