This document specifies a liquid chromatography-mass spectrometry method for the determination of organic acid content in wine grapes and wine. This document is applicable to the determination of malonic acid, pyruvic acid, fumaric acid, succinic acid, L-tartaric acid, quinic acid, shikimic acid, citric acid, DL-malic acid, and L-lactic acid in wine grapes and wine.
