Scope
This standard specifies the terms and definitions, basic requirements, processing, packaging, freezing, storage, transportation and production records of frozen freshwater surimi. This standard applies to the production of frozen freshwater surimi made from fresh, live and frozen fish as raw materials and processed through meat harvesting, rinsing, fine filtration, dehydration and freezing. Frozen surimi produced from other animal-based aquatic product raw materials can be implemented by reference.
