This document specifies the liquid chromatography-mass spectrometry/mass spectrometry method for the determination of the content of capsaicinoids in plant-derived products. This document is applicable to the determination of N-nonanoic acid vanilloyl, plateletin and dioxygenin content in peppers and their products.
