By consulting domestic and foreign literature and standards, combined with the inspection results of Guanzhong wheat flour samples extracted during the survey, the quality and safety indicators of Shaanxi Haoliangyou Guanzhong wheat flour were clarified. Quality indicators: sand content ≤0.01%; magnetic metal objects ≤0.002 (g/100g); moisture content ≤14.5 (g/100g); falling number 260s-400s; normal color and smell; maximum tensile resistance ≥300 (90min) ; Extensibility ≥150mm (90min); wet gluten content of high-gluten wheat flour ≥30%, medium-gluten wheat flour ≥28%; gluten index of high-gluten wheat flour ≥80%, medium-gluten wheat flour ≥70%; powder stability time of high-gluten wheat flour ≥5.0min , medium-gluten wheat flour ≥ 3.0min; ash content of high-gluten wheat flour first-level ≤ 0.5 (g/100g), second-level ≤ 0.7 (g/100g), medium-gluten wheat flour first-level ≤ 0.5 (g/100g), second-level ≤ 0.7 (g/ 100g); the food score value of high-gluten wheat flour is ≥90 points for grade one, ≥80 points for grade two, medium-gluten wheat flour is ≥90 points for grade one, and ≥80 points for grade two; safety index PN ≤ 0.7.
