- This document specifies the technical requirements and inspection methods for freshwater fish supplied to Xiamen for food. This document applies to herring, grass carp, silver carp, bighead carp, bream, mandarin fish, crucian carp, carp, sea bass, snakehead (snakehead fish), yellow catfish (yellow bone fish), tilapia, eel, sturgeon, catfish Common major freshwater fish species such as loach and eel are live fish, chilled fish or frozen fish, and do not include raw food fish.
