This document describes the principle of gas chromatography-mass spectrometry for the determination of 2-acetyl-1-pyrroline content in rice, and stipulates the requirements for reagents and materials, instruments and equipment, analysis steps, calculation and presentation of results, precision, etc. This document is applicable to the determination of 2-acetyl-1-pyrroline content in rice. The detection limit is 0.005mg/kg and the lower limit of determination is 0.015mg/kg. The principle is as follows: the rice sample is extracted with methylene chloride under water bath heating conditions, measured by gas chromatography-mass spectrometry, and quantified by the internal standard method.
