This standard describes a standardized method for detecting thermostable DNase (thermonuclease) produced by coagulase-positive Staphylococcus in samples of milk and dairy products. The presence of this enzyme represents an index of development of Staphylococcus to a level that implies the possibility of formation of staphylococcal enterotoxins. The method is applicable to milk and dairy products.
