Scope
This standard describes a reference method for calculating the approximate content of added emulsifiers based on citrates in processed cheeses. This content will be expressed as citric acid. The method is applicable to processed cheeses that do not contain ingredients other than powdered milk and/or whey, in powder form and with an appreciable citric acid content.
