This standard describes a routine method for the determination of phosphatase activity in milk and milk products. The method is not affected by the presence of phenol, and its use is particularly recommended when contamination of the environment by traces of phenol may give inaccurate results with the reference method (UNE 34-831). The method can be used to check whether pasteurization has been carried out correctly. The method is applicable to liquid and powdered milk, liquid and powdered buttermilk, and liquid and powdered buttermilk. NOTE — In some countries, all samples giving results greater than 10 m 9 are considered unsatisfactory.
