Scope
Part2:FluorometricmethodforcheeseThisstandardspecifiesafluorometricmethodforthedeterminationofalkalinephosphataseactivityincheese.Thismethodisalsoapplicabletosoftcheesesandsemi-hardcheesesfordistinguishingrawmilkcheesesfromcheeseproducedwithpasteurizedmilk,providedthatthemouldisonlyonthesurfaceandnotalsointheinnerpart(e.g.blue-veinedcheeses).Thismethodcanalsobeusedtochecktheproperpasteurizationofcheeseoritsrawmaterial.Inlargehardcheeseswherethewheycurdmixtureisscaldedattemperaturesabove50degreesCelsius,hightemperaturesremainforarelativelylongtime.Thisisespeciallythecaseinthecentreofthesecheeses,thuspromotingphosphataseinactivation.Todistinguish,therefore,betweenhardcheesesfromrawmilkandhardcheesesfrompasteurizedmilkisdifficultandoftenevenimpossiblebythismethod.
